Since it is possible to tour by kayak in calm as well as choppy waters, the best model will depend on the intended use. A trip lasting several days will require a boat with more carrying capacity than an outing of several hours.
These craft can be of fiberglass or wood, folding or inflatable, hold one or more paddlers, and be intended for long-distance touring or shorter excursions.
Such kayaks usually have a high-quality finish to improve hydrodynamics and paddling comfort. The storage compartments are designed to be practical and to offer enough room to bring along safety equipment and all other necessary gear and supplies.
If you are planning a long trip, be sure the compartments allow for proper weight distribution. Speed and stability suffer from too much weight fore or aft. Consider a folding model if your touring destination requires a plane trip and renting is not an option.
